From the family kitchen – Waffles



  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 egg yolks
  • 1 3/4 cup milk
  • 1/2 cup cooking oil
  • 2 egg whites

Breakfasts at our house are often a grab and run event.  Between getting the kids ready for home school and getting her husband ready for work, Rosanne often finds little time left to prepare a hot breakfast.  All that changes on Saturday as the family comes together in the kitchen to enjoy two of our favorite things, family and food.  This recipe is a hit in our house and trust you will enjoy it as well.  It comes from one of my wife’s favorite cookbooks.  the “Better Homes and Gardens new Cook Book”,  p 127 (1996 Edition)

  1. Stir the dry ingredients together in a medium sized mixing bowl and set aside for later.
  2. In a seperate mixing bowl  beat the egg yolks slightly before adding the milk and oil.
  3. Add the wet ingredients to the dry mixing bowl.  Stir till moistened and lumpy.
  4. In a small mixing bowl beat the egg whites until the tips stand straight.
  5. Gently fold the beaten egg whites into the main batter leaving a few fluffs of egg whites
  6. Pour 1 cup (amount varies on waffle maker) onto your waffle maker, cook until done.
Enjoy with your favorite fresh fruit and maple sirup.  For an added treat add a dab of ice-cream.
